Is there any equivalent of the old "Deadlands" Sleight of Hand Aptitude? I know there is a Gambling Skill, but I was thinking of something along the lines of Pickpocketing - or should I use the Stealth Skill?

It's the Stealth skill. Check page 10 of SWEX, "Stealth is the ability to both hide and move quietly, as well as palm objects and pick pockets."
