In the rule book it often reads something like "for each raise do X". When it comes to explaining damage it says "If your attack hits with a raise, add +1d6 to your damage total as well!" i.e. there is no "for each raise". Does that mean I only ever get one additional d6 or can it be multiple raises?

It means only the first raise. That keeps manuevers like Called Shots where the character takes a penalty to bypass armor or do more damage viable. It's also keeps the game moving as you can immediately move on to resolving damage.
That said, the GM has flexibility to "Interpret the Die Rolls" as noted on page 124 of SWD. If there is a gonzo roll, go with it and add some embellishment. Just balance it with keeping the game moving and not devaluing the choice to make a Called Shot.
